Christmas Rocky Road

Christmas is just around the corner, and you know what that means—it's time to indulge in all things sweet and festive! And what better way to celebrate the season than with a delicious batch of Christmas Rocky Road? If you've never heard of this delightful treat before, don't worry, you're in for a real treat (pun intended).

Prep time: 20 mins 
Cook time: 5 mins (plus min. 3 hours for cooling) 
Makes: 20 squares 

Ingredients:

100g butter, cubed, plus extra for the tin
250g Christmassy biscuits, e.g. shortbread or chocolate
75g shelled nuts (can be a mixture of what's in your cupboard)
100g mixed dried fruit, e.g. raisins or cherries)
75g Christmas sweets, e.g. candy cans, jelly sweets, or marshmallows
400g milk or plain chocolate (or a mix), chopped
140g golden syrup
2 tbsp sprinkles, or more sweets, for decoration

Method:

Step 1: Butter and line a 20cm square tin. Break the biscuits into pieces that are no smaller than a pea but not too chunky for the mixture to hold together.

Step 2:  Halve any bigger nuts and combine them with the biscuits. Halve any big pieces of dried fruit and chop sweets into smaller pieces, then add these to the bowl.

Step 3: Melt 300g of the chocolate, butter, and golden syrup in a pan over a low heat, stirring occasionally. Pour this over the biscuit and nut mixture and mix altogether so that the chocolate covers everything. 

Step 4: Tip the mixture into the tin, smoothing out for an 'even' top. Melt the remaining chocolate either in the microwave in short blasts or on the hob in a heatproof bowl over a small pan of simmering water. Drizzle this over the top and sprinkle on the festive decorations.

Chill for at least 3 hours before cutting into squares. 

Will keep in the fridge for 3-4 days.

    Looking forward to doing the Rocky Road.
    I have your 6lt slow cooker how does the recipe change from a 3.5lt cook book. Am having real problems in finding recipe books for the 6lt cooker- any suggestions (apart from suggesting to the writers they make it clear the size of the cooker that fits the recipe – (sorry sarcastic).
