Slow Cooked Mushroom Bourguignon
Looking for a delicious and hearty meal to enjoy on a chilly evening? Why not try making slow cooked mushroom bourguignon? This classic French dish is earthy and flavourful, with tender mushrooms and a rich tomato-based sauce that will warm you up from the inside out.

Cooking Time: 4-5 hours
Serves: 4
Ingredients
- Small bag of round shallots (peeled)
- Olive oil
- 3-4 garlic cloves (minced)
- Plain flour
- Vegetable stock
- 400ml Malbec
- Punnet of button mushrooms (or other small mushroom)
- Punnet of mixed woodland mushrooms
- Punnet of chestnut mushrooms
- 2 large carrots, peeled and cut into chunks
- Bay leaves
- Small bunch thyme
Method
Step 1: In a well-oiled pan, sear the shallots until brown on a medium heat
Step 2: Add the garlic and stir for two minutes until you can really smell the garlic
Step 3: Whilst the garlic and shallots are cooking, brew up a jug of vegetable stock and set to one side
Step 4: Add the shallots, carrots, mushrooms and stock to a crockpot/slow cooker
Step 5: Tie the thyme and bay leaves together and add to the crockpot/slow cooker
Step 6: Add the red wine and cook on medium for 4-5 hours
Step 7: We served ours with some creamy mashed potato
