Raspberry-Chocolate Truffle Tart for Two

Ingredients:

For the Chocolate Crust:

  • 1 cup chocolate cookie crumbs (from about 10-12 chocolate sandwich cookies)
  • 4 tablespoons unsalted butter, melted
  • Pinch of salt

For the Raspberry-Chocolate Truffle Filling:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries, plus extra for garnish

  • Whipped cream
  • Mint leaves

Instructions:

1. Prepare the Chocolate Crust:

  • In a bowl, combine the chocolate cookie crumbs, melted butter, and a pinch of salt. Press the mixture into the bottom and up the sides of a 7-inch tart pan. Use the back of a spoon to create an even crust. Place it in the refrigerator to set while you prepare the filling.

2. Make the Raspberry-Chocolate Truffle Filling:

  • In a heatproof bowl, combine the chocolate chips, heavy cream, and butter. Microwave in 30-second intervals, stirring each time, until the chocolate is melted and the mixture is smooth.
  • Stir in the vanilla extract.
  • Gently fold in the fresh raspberries, being careful not to crush them completely.

3. Fill the Chocolate Crust:

  • Pour the raspberry-chocolate truffle filling into the prepared chocolate crust. Smooth the top with a spatula.

4. Chill the Tart:

  • Place the tart in the refrigerator and let it chill for at least 2 hours, or until the filling is set.

5. Garnish and Serve:

  • Once the tart is set, carefully remove it from the tart pan. Garnish with extra fresh raspberries, a dollop of whipped cream, and mint leaves if desired.
