Overnight Breakfast Casserole

Wake up to the delicious smell of breakfast! Who needs an alarm clock when you have this amazing overnight breakfast casserole ready for you in the morning?

Prep time: 10 minutes

Cooking time: 8 hours

Serves: 6 people

 Ingredients

  • 12 eggs
  • 1 cup milk
  • Salt
  • Black pepper
  • Olive oil
  • 4-5 frozen hash browns
  • 1 pack bacon lardons
  • 1 pack of sausages (cut into bite-sized pieces)
  • 1 chopped onion
  • 2 chopped spring onions
  • 250g grated cheddar cheese
  • Hot sauce for serving (optional)

Method

  • To a dry frying pan add your bacon lardons and allow the fat to render
  • Once the fat has rendered a little and coated the pan, add your sausage pieces to brown them
  • In your slow cooker, make a layer of hash browns in the bottom
  • Layer your chopped onion, bacon, sausage, spring onion, and cheese
  • In a large mixing bowl, crack your eggs, add your milk, season with salt and pepper, and whisk until smooth
  • Set the slow cooker to low and leave to cook overnight
  • In the morning, serve in bowls with a large spoon, add hot sauce and garnish with spring onion
  • Enjoy!
