Caramelised Mushroom Tartlets

Makes: 12

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped 
  • 1 tbsp golden caster sugar
  • 250g chestnut mushroom, thinly sliced 
  • 1 clove of garlic, crushed 
  • 3-4 tbsp thyme leaves, finely chopped 
  • A little butter for greasing
  • 12 slices of thin sliced white sandwich bread 
  • 100g grated gruyere or cheddar, for sprinkling 

Method: 

Step 1: Start by heating the oil in a large frying pan, then add the onion and fry over a medium heat for around 7 minutes until soft and golden.

Step 2: Now stir in the sugar and seasoning, then turn up the heat and add the mushrooms. Let sizzle for around 5 minutes or until the mushrooms are golden. Add in the garlic and cook for a few further minutes, before turning off the heat and stirring in most of your thyme (keep a little to one side for sprinkling at the end). 

Step 3: Now it's time to make the tartlet! Start by cutting 7-8cm circles out of the bread using a cookie cutter or glass. Butter one side and place buttered-side down into a 12-hole tartlet tin (you can also use a cupcake tin). 

Step 3: Heat your oven to 220C/200 fan/gas 7. Divide the mushroom mixture between the tartlets and sprinkle a little cheese on the tops. Bake for around 10-15 minutes or until golden and bubbling. Sprinkle over the remaining thyme and serve!
