Air Fryer Sweet Potato Fries with Tofu Mayonnaise

Serves: 2

Ingredients:

  • Two sweet potatoes
  • Extra virgin olive oil
  • Seasoning, e.g., sea salt, smoked paprika, Cajun, BBQ, garlic, mixed herbs

For the tofu mayonnaise:

  • Half pack of silken tofu 
  • ½ tsp dry mustard
  • ½ tsp sea salt
  • 1½ tbsp lemon juice
  • 1 tbsp rice syrup
  • 1 tbsp apple balsamic vinegar
  • ½ cup extra virgin olive oil

Method:

Step 1: Peel (optional) and slice the sweet potatoes into ½cm sticks. Pop them in a bowl and drizzle over some oil and toss. 

Step 2: Sprinkle over your choice of seasoning (or a mixture) and mix well.

Step 3: Cook in your air fryer at 180°C for around 10-15 minutes, until lightly golden, and giving a shake halfway through.

Tofu mayonnaise:

Step 1: Place the tofu, dry mustard, sea salt, apple balsamic vinegar, rice syrup, and lemon juice into a blender.

Step 2: Blend with a low speed and slowly pour in the olive oil with two teaspoons of very hot water to emulsify the mayonnaise. 

Mayonnaise can be kept in the fridge for up to 3 weeks.
