Air fryer Mince Pies

Get ready to wow your taste buds with a twist on the classic mince pie! This Christmas season, switch up your dessert game and whip up some air fryer mince pies. This modern take on a traditional treat will have your friends and family asking for the recipe. 

Prep time: 30 mins 
Cook time: 10-15 plus chilling  
Serves: 8-12 

Ingredients: 

  • 500g shortcrust pastry, ready-made or homemade 
  • Plain flour for dusting 
  • 350g mincemeat (vegetarian, if necessary) 
  • 1 egg
  • Icing sugar, for dusting 

Method:

Step 1: Start by rolling out your pastry on a lightly floured surface, you should aim for a thickness of around 1/2cm. Using a 8-10cm round cutter, stamp out as many discs as possible. You may need to re roll the off cuts to make the most of your pastry! 

Step 2: Now start to spoon 1tbsp of mincemeat onto the middle of your discs. You can stamp out small stars or other festive shape from the middle of half of your discs and then set to one side. 

Step 3: Beat your egg and brush around the edge of each mincemeat topped disc. Now place your star lids on top before brushing with a little more egg wash.  

Step 4: With either a fork or your fingers, seal the edges of the pies. Place the pies on a baking tray and chill in the fridge for around 30 minutes.  

Step 5: Now heat your air fryer to 180c and add a square/rectangle of baking paper to the basket. Place your pies on the baking paper, ensuring they are equally spaced. You may need to cook them in batches, depending on the size of your air fryer.  

Step 6: Cook the pies for around 8-10 minutes before checking on them, they may need a little longer and so cook for a further 2-3 minutes or until golden brown and steaming hot! Remove for the air fryer and leave to cool for around 5 minutes, before dusting with icing sugar and serving with a little cream!
